Here we are… a start of something new. This is me, Emmee and I am looking to start a blog here on our website.

I love to read books, I like to write and I love to learn new things/ideas. If you have came here to learn something, find a good recipe, learn a new tip or just for fun… you are in the right place, WELCOME! We are glad you are here.

Today is Tuesday, March 11th and we are at a balmy 44 degrees here in Minnesota. I have been at my “full time” job all day and ready to get home to keep spring cleaning, make a good dinner and prepare for a meeting later this evening with a group from my small town to discuss Hispanic Outreach.

Four Chicos Farm had a great market last Saturday where we sold out of Sourdough, Scones, Cinnamon Rolls and only had a few cookies left, enough for me to share some with my sweet Grandma who moved to the Care Center recently and always enjoys a sweet treat. Thank you to those of you who joined us, purchased a fresh loaf of sourdough, picked up your pre orders or just came to say hello.

Today I am going to share a fun recipe with you for my Grandmother’s Hotdish. It is a Lopez Family favorite and is sure to be doubled in size so we can enjoy it for lunch tomorrow, as well. If you aren’t from Minnesota and wondering what a “hotdish” is, just look it up on Pinterest and you will be amazed at the different hotdishes there are, especially here in the Midwest.

Grandma’s Hotdish

2 lbs. elbow macaroni

4 cans cream of msuhroom soup

1 lg. can of mushrooms

2 celery stalks, chopped fine

1 small yellow onion, chopped fine

1 c. whole milk

1 can sweet corn

2 lbs. hamburger

2 t. garlic salt

salt/pepper to taste

  • Cook the elbow macaroni and then drain. Rinse off with cold water, set aside.

  • Brown hamburger, onion and celery, set aside.

  • Mix all other ingredients together and then put together with macaroni and mix well.

  • Put in a 9×13 pan and bake at 375 degrees for 40-45 minutes. Cover with foil for first 30 minutes.

    Enjoy!

What a crazy last 24 hours…

Whew… what a crazy last 24 hours it has been! Yesterday afternoon, my second oldest child complained of stomach pain. Honestly, I tried to downplay it and thought it was just a little stomach ache but after a little bit, I knew this was something serious. Without telling you every boring detail, we went through three different Emergency Rooms and 7 hours later and we arrived at the final destination where we would be admitted. Our child had an inflamed appendix and lots of infection. Blood tests, ultrasound, CT scan and more told us this was going to be a long night.

We are super exhausted and finally going to get a good nights rest after he has been done with surgery and feeling better and in less pain. I never knew how much my child could endure. I truly do not think I could have gone that long with such excoriating pain and on top of it nothing to eat or drink for over 24 hours total. He did great and we are looking forward to better days ahead.

Just wanted to hop on here and tell you thank you for all the prayers, nice messages from friends and family, cards from his classmates and well wishes. We are truly blessed to live in such a great, small town. I thank God every single day that we live where we do, and that we are so blessed with good people in our lives. A big shout out to Gio’s teacher… Mrs. Hegge. She is an absolute angel. I have never shared my location with a teacher of my child, only so she could make sure we made it safe in the ambulance to the next hospital. She is an absolute Saint. The best part- I had her for my teacher when I was in Elementary School. How cool!

Another big shout out to my good friend, Brittany. She and I are friends since Elementary school and was in my wedding. She is the type of friend you can go 6 months without seeing and no matter what happens, our conversations just seem to fit right back where they left off. She is a nurse here in Rochester and she came after a long 12+ hour day on her shift just to visit and check on Gio. What a gift, what a relief it was to see a familiar face and have her help me with Gio’s cares for a bit and let me vent. I am thankful for you and hope you know how much you mean to me! Love you girl!

Well, its time for me to get to bed and get some rest! It has been a long last 24 hours and I am ready to shut my eyes and enjoy the peace and quiet of this beautiful hospital. We are so blessed and I am speechless on how well we have been treated here on the PEDS floor. God is so good and I am thankful my little boy can rest without much pain tonight and be able to enjoy a good meal tomorrow morning and lots of liquids. God bless and be safe everyone!
